Keto Avocado, Tomato, and Bacon Salad
A yummy lunch, or late day snack of heart healthy avocados, tomatoes, and bacon……. The healthy fat of the avocado will keep you full for hours with no desire to snack. The bacon is 50% fat and 50% protein, the perfect combination for a Keto diet. ( This is a weekly treat, not daily, I believe in very limited quantities of bacon a week). Avocados are chuck full of vitamins B, E, K, and C and potassium. Avocados are the perfect food for glowing skin and hair and to keep you heart healthy… Fresh tomatoes are full of anti-oxidants and also help to keep skin young looking and firm ( very important when you are losing weight!)
Ingredients
- 1 avocado
- 1 TB extra virgin cold pressed olive oil from Italy Stored in glass bottle. I have found the best prices at HomeGoods
- 2 slices thick sliced bacon slice in half Aldi's has the best prices on thick sliced bacon.
- 8-10 cherry tomatoes sliced in half
- 1/3 cup fresh basil leaves
- 1/8 tsp Himalayan pink salt
- 1/8 tsp ground pepper
Instructions
- Cut the avocado in half and scoop out the seed, place on plate. Slice cherry tomatoes or whole tomatoes on the plate. Fry bacon to desired darkness ( keeping it more fatty will help you stay full longer). Drizzle with extra virgin olive oil and salt and pepper. Tear apart basil leaves and sprinkle over the tomatoes.
