Yummy, cheesy Keto bread taste just like a fresh-baked bread. You may slice it, toast it, and make into grilled cheese.

Equipment

  • shallow oven pan lined with parchment paper

Ingredients
  

  • 1 3/4 cups shredded cheddar cheese
  • 2 TB cream cheese full-fat and at room temperature
  • 1 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 egg
  • 1 TB extra virgin olive oil
  • 1 1/2 cups almond flour
  • 1 TB Herbs de Provence May use any dried herbs, roasted garlic powder, or 1 TB of chopped sun-dried tomatoes. May also skip all seasonings.

Instructions
 

  • Mix the almond flour, cheddar cheese, baking powder, pinch of salt, and cream cheese in a glass bowl.
  • Microwave for one minute. Then add one egg. MIx and form into a loaf with a metal spoon.
  • Form into a loaf on the parchment lined oven pan. May need to add more almond flour to the dough if too sticky to form a flat loaf. Should be about 1/2 inch high. Flatten with a metal spoon. Brush with olive oil. May sprinkle more cheese on top.
  • Bake for 15 minutes and pull out of oven to check edges. When edges begin to brown, it is done, but may need to bake for 3 more minutes. Watch carefully, it burns quickly!!
  • Let cool for 15 minutes, then slice into thin slices. Store in the refrigerator and microwave for 20 seconds to reheat. May be spread with butter, dips, cheeses, or cream cheese. May be toasted carefully. May also be crumbled into pieces and used as "dumplings" in chili or soups.
