Lamb and avocado meatballs are extremely healthy, easy to prepare, and delicious!!
Equipment
- saute pan
Ingredients
- 1 pound ground lamb May use ground chicken or turkey.
- 1/2 cup shredded mozzarella cheese
- 1 small ripe avocado chopped Avocado is an optional ingredient, the meatballs are still yummy without the avocado.
- 1 tsp cumin
- 1 TB minced garlic
- 1/8 tsp cayenne pepper Cayenne pepper may be increased for more spicy meatballs or deleted if no spiciness is desired.
- 1 tsp turmeric Turmeric is rich in curcumin which may help to prevent cancer.
- 2 TB extra olive oil or Ghee
- 1/2 cup dry white wine
- 1 cup beef broth
- 1 TB fresh chopped herbs such as rosemary, parsley, or thyme
- 1/2 cup heavy cream Heavy cream is an optional ingredient. It will make the lamb meatballs more creamier, but does add calories.
- 3 TB shaved or shredded Parmesan cheese I like to purchase the large bag of shaved Parmesan cheese at Sam's Club to add pizzazz to my Keto meals.
- 1/2 tsp kosher salt
Instructions
- Mix the ground lamb, cheese, avocado, salt and spices together.
- Form into small meatballs and place on a plate.
- Saute in a pan with 2 TB olive oil or ghee until brown, about 3-4 minutes for each side. Do not overcook or meatballs will be dry and hard. Meatballs will have a chance to cook thoroughly in the beef broth.
- Add 1/2 cup of dry white wine and let the wine evaporate for about 15 minutes ( there will be no alcohol content to the meatballs), but this step may be skipped.
- Add 1 cup of beef broth and let simmer for 20 minutes. Sprinkle with chopped herbs. May add 1/2 cup of heavy cream and let the cream thicken for 5 minutes. Serve with shaved Parmesan cheese
