These Keto Oven Baked Chicken Legs use rotisserie seasoning, buttermilk, and crushed organic pork rinds to taste just like fried chicken but with less than 2 grams of carbs. Your whole family will love these delicious chicken legs and they taste even better re-heated in the oven the next day!!
Equipment

- Basting brush for olive oil if you desire a more crispy chicken.
Ingredients

- 3/4 cup buttermilk https://www.walmart.com/grocery/search/?query=buttermilk
- 1 organic egg https://www.walmart.com/grocery/ip/Marketside-Organic-Cage-Free-Brown-Eggs-Large-12-
- 2 cups organic pork rinds- My favorite brand is from Walmart-Por-Q https://www.walmart.com/grocery/ip/PORQ-Black-Pepper-Sea-Salt-Pork-Rinds-
- 2 TB Badia Rotisserie Chicken Seasoning Amazon.com/Badia-Rotisserie-Chicken-Seasoning-
- 3 TB extra virgin olive oil optional for a more crispy chicken
Instructions
- Put 2 cups of pork rinds in a large storage bag and crush with a rolling pin, Make sure they are firmly crushed.
- Pour the buttermilk and one beaten egg in a shallow bowl. Roll one chicken leg in the buttermilk and egg mixture.
- Pour crushed pork rinds on a plate. Roll the chicken legs in the crushed pork rinds.
- Place the chicken legs on a parchment lined shallow oven pan. Sprinkle generously with the rotisserie seasoning, do not add additional salt.
- Bake at 400 degrees, turn after 25 minutes, bake another 20-25 minutes until the chicken is a golden brown and internal temperature is 165 degrees. May want to use a brush and add some olive oil to get more crispy.
- To re-heat, do not microwave. Put cold chicken legs back on an parchment lined shallow oven pan and re-heat at 400 degrees for at least 10 minutes to get the chicken crispy again.
