Pack an old fashioned picnic basket with a blue and white sheet, a wine key, some plastic wine glasses, cloth napkins, silver ware and small plates….. Add a bottle of chilled white wine and pick a romantic park or hike……. For the Perfect Picnic foods; try chicken salad, homemade pita chips, deviled eggs, and bruschetta……. All of these foods cost less than $10 and are part of the Mediterranean Keto Lifestyle….. Other options would include; artichoke dip, fresh berries, assorted meats and cheese, olives, cold, boiled shrimp, pineapple cheese ball, and hummus and chips…..

Ingredients
  

Deviled Eggs

  • 6 boiled eggs
  • 1/4 cup full-fat mayo
  • 1/2 tsp tarragon or dill weed
  • 1/8 tsp salt
  • 2 fresh chives ( optional)

Bruschetta

  • 2 pita breads
  • 4 Roma tomatoes-chopped
  • 2 TBs olive oil
  • 1 TB McCormick vegetable seasoning mix
  • 1/2 cup fresh basil leaves
  • 1/2 cup shave parmesan cheese may use mozzarella, fresh mozzarella, provolone, goat cheese, or feta cheese

Chicken Salad

  • 12.5 ounce canned chicken breast
  • 1/2 cup full-fat mayo
  • 1 tsp tarragon or dill weed
  • 1/8 tsp salt

Instructions
 

Deviled Eggs

  • Boil six eggs, then remove from the heat, cover for 20 minutes, rinse in cold water, and peel.
  • Slice the eggs in half, scoop out the yolks, mash with a fork.
  • Add 1/4 cup mayo, salt, and tarragon
  • Scoop back into the egg whites, top with fresh chopped chives

Bruschetta

  • Take 2 pita breads from the freezer and let defrost on the counter for 30 minutes. Put on a shallow oven tray lined with parchment paper.
  • Brush with olive oil and McCormick vegetable seasoning on both sides.
  • Bake at 400 degrees for 4 minutes, flip, and bake for one more minute.
  • Add the chopped Roma tomatoes, 1/2 cup shaved parmesan cheese, and fresh basil.
  • Bake for 1-2 more minutes, until the cheese has melted.

Chicken Salad

  • Drain the can of chicken breast, mash large chunks with a fork.
  • Add 1/2 cup full-fat mayo, salt, tarragon and mix well.
