Eating just one mushroom a day with a green veggie will reduce your risk of getting breast cancer by 89%!!  The special thing about mushrooms is that they contain three important compounds that fight cancer:  Anitgen Binding Lectins, Aromatase Inhibitors, and Anti-Angiogenic Properties.
The antigen binding lectins of mushrooms are proteins that bind to abnormal cancer cells and activate the body’s defense system to destroy the cancer cells.  Mushrooms have been used in therapies to cure cancer in patients with breast and colon cancers. Yummy Stuffed Portobello Pizza Mushrooms are an easy way to eat a mushroom a day!!

Equipment

  • 1 parchment lined, shallow oven pan
  • 1 brush brush the mushrooms with olive oil

Ingredients
  

  • 4 whole Portobello mushroom caps scrape the inside of the mushrooms out and wipe dry with a paper towel
  • 4 TBs extra virgin olive oil
  • 2 TBs McCormick's vegetable seasoning mix
  • 1 lb ground Italian sausage
  • 15 ounce can diced tomatoes May use 4-5 fresh diced tomatoes
  • 3 TBs tomato paste
  • 1 tsp dried basil May use 1-2 TBs fresh basil on top of the mushrooms
  • 1 tsp dried oregano
  • 1 tsp pink Himalayan salt pink Himalayan salt is free from the plastics of regular table salt
  • 1/4 tsp red pepper flakes use red pepper flakes to taste
  • 1 tsp garlic powder
  • 1/2 cup whole milk ricotta cheese
  • 1/2 cup shredded mozzarella cheese May use shredded provolone or parmesan cheese

Instructions
 

  • Scrape out the inside of the mushrooms and wipe drive with a paper towel
  • Brush the mushrooms with olive oil and sprinkle with McCormick vegetable seasoning mix
  • Line a shallow oven pan with parchment paper and bake the mushrooms for 5-6 minutes in a 400 degree oven, turn and bake for another 2 minutes.

Meat Sauce

  • Brown the Italian sausage in a pan with 1-2 TBs of olive oil. Drain in a colander.
  • Return the cooked sausage to the pan and add a can of diced tomatoes.
  • Add the tomato paste, salt, oregano, basil, garlic powder, and hot pepper flakes (to taste)
  • Cover the pan and simmer the sauce for 20 minutes

Stuffed Pizza Portobello Mushrooms

  • Spoon 1/2 cup of the meat sauce ( you may also use prepared marinara sauce) on top of each baked Portobello mushroom.
  • Add 2 TBs ricotta cheese on top of the meat sauce
  • Add 2-3 TBS of shredded mozzarella cheese or one slice of cheese
  • May top with fresh basil.
  • Bake in a 400 degree oven for 2-3 minutes until the cheese is brown on top
