Equipment
- 1 parchment lined, shallow oven pan
- 1 brush brush the mushrooms with olive oil
Ingredients
- 4 whole Portobello mushroom caps scrape the inside of the mushrooms out and wipe dry with a paper towel
- 4 TBs extra virgin olive oil
- 2 TBs McCormick's vegetable seasoning mix
- 1 lb ground Italian sausage
- 15 ounce can diced tomatoes May use 4-5 fresh diced tomatoes
- 3 TBs tomato paste
- 1 tsp dried basil May use 1-2 TBs fresh basil on top of the mushrooms
- 1 tsp dried oregano
- 1 tsp pink Himalayan salt pink Himalayan salt is free from the plastics of regular table salt
- 1/4 tsp red pepper flakes use red pepper flakes to taste
- 1 tsp garlic powder
- 1/2 cup whole milk ricotta cheese
- 1/2 cup shredded mozzarella cheese May use shredded provolone or parmesan cheese
Instructions
- Scrape out the inside of the mushrooms and wipe drive with a paper towel
- Brush the mushrooms with olive oil and sprinkle with McCormick vegetable seasoning mix
- Line a shallow oven pan with parchment paper and bake the mushrooms for 5-6 minutes in a 400 degree oven, turn and bake for another 2 minutes.
Meat Sauce
- Brown the Italian sausage in a pan with 1-2 TBs of olive oil. Drain in a colander.
- Return the cooked sausage to the pan and add a can of diced tomatoes.
- Add the tomato paste, salt, oregano, basil, garlic powder, and hot pepper flakes (to taste)
- Cover the pan and simmer the sauce for 20 minutes
Stuffed Pizza Portobello Mushrooms
- Spoon 1/2 cup of the meat sauce ( you may also use prepared marinara sauce) on top of each baked Portobello mushroom.
- Add 2 TBs ricotta cheese on top of the meat sauce
- Add 2-3 TBS of shredded mozzarella cheese or one slice of cheese
- May top with fresh basil.
- Bake in a 400 degree oven for 2-3 minutes until the cheese is brown on top
