Ingredients
  

  • 2 cups fresh spinach
  • 1 chopped boiled egg
  • 1/2 cup shredded carrots
  • 1/2 cup shredded red cabbage
  • 1/2 cup sliced zucchini
  • 5 boiled and chilled shrimp, chopped
  • 1 small tomato diced
  • 1 avocado
  • 1/2 cup French fried onion rings For some extra crunch, add just 2 grams of carbs!

Instructions
 

  • Layer spinach, zucchini, tomatoes, shredded carrots, shredded red cabbage on a large salad plate. Top with chopped, chilled boiled shrimp, sliced avocado, and one chopped boiled egg. Sprinkle French fried onion rings on the top for some extra crunch. My favorite dressing is Chipotle Ranch!!
  • To boil the shrimp. bring a pan of water to boil, add 1 TB Old Bay seasoning mix, five frozen shrimp, boil for 3 minutes. Remove from water and set in bowl of ice until chill. Pat dry and remove the shells.
