Garlic, Herb, and Bacon Roasted Pork Tenderloin
This pork tenderloin is stuffed full of herbs, lemon and garlic boosting the antioxidants that fight cancer and repair damage in the body. It is also delicious, whole foods, and Keto friendly.

Ingredients
- 2-3 pounds boneless pork tenderloin The least expensive prices are at Walmart or Aldi's. Do not buy the flavored pork tenderloin.
- 1/3 cup fresh shopped herbs I used herbs from my garden such as rosemary, sage, oregano, and basil
- 10 cloves whole garlic
- 1 tsp Himalayan sea salt
- 1/4 tsp ground pepper
- 3 TBs extra virgin olive oil
- 5 slices thick sliced bacon My favorite and least expensive thick sliced bacon is from Aldi's
Instructions
- Take a large spoon or mallet and smash the garlic, peel the skins and mince. Add 1/2 tsp salt and chopped herbs. Save a small amount of chopped herbs for presentation when the roast is finished cooking.
- On a parchment lined shallow oven pan place the pork tenderloin. Slice the pork tenderloin in half and place the garlic, salt, and herb mixture in the center. Wrap with kitchen twine. Use a kitchen brush and rub with the olive oil. Sprinkle with the rest of salt and pepper. Wrap with slices of bacon.
- Bake in a 400 degree oven for 45-60 minutes until the internal temperature reads 145 degrees. Let cool for 10 minutes and serve with additional chopped herbs.
