Take a large spoon or mallet and smash the garlic, peel the skins and mince. Add 1/2 tsp salt and chopped herbs. Save a small amount of chopped herbs for presentation when the roast is finished cooking.
On a parchment lined shallow oven pan place the pork tenderloin. Slice the pork tenderloin in half and place the garlic, salt, and herb mixture in the center. Wrap with kitchen twine. Use a kitchen brush and rub with the olive oil. Sprinkle with the rest of salt and pepper. Wrap with slices of bacon.
Bake in a 400 degree oven for 45-60 minutes until the internal temperature reads 145 degrees. Let cool for 10 minutes and serve with additional chopped herbs.
