Cauliflower is high in fiber, full of cancer fighting antioxidants, loaded with vitamins and minerals, and the veggie that is highest in choline, which may prevent Alzheimer's…….. Cauliflower will also keep you feeling full, and is perfect for an evening meal before a long fast…….. I personally can't stand the texture of cauliflower rice after eating so much of it, so I created this creamy, smashed cauliflower recipe, which taste just like smashed potatoes….. I use it as a side dish, but also as a quick late lunch topped with extra Parmesan cheese, bacon, and fresh basil…….
Equipment
- Covered Dutch oven or pan
- potato masher
Ingredients
- 1 head cauliflower, rinsed and cut into pieces Sam's Club has the biggest heads of cauliflower for the best price.
- 1 cup organic chicken broth
- 2 TB full fat cream cheese
- 1/2 cup shredded and shaved Parmesan cheese
- 2 TB fresh basil or chives
- 1/2 cup heavy cream
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Instructions
- Rinse and cut the cauliflower into small pieces .
- Put the cauliflower in a covered pan and add 1 cup chicken broth. Simmer on very low for 20 minutes until soft and most of the chicken broth has evaporated. Be very careful to watch carefully, it can burn very quickly once the chicken broth has evaporated.
- Once the cauliflower has soften, use a potato masher to smash, add two TBs of cream cheese, and heavy cream. Stir in shredded or shaved Parmesan. Season with salt and pepper. Sprinkle with fresh basil or chives. May add chopped bacon on top.
