Rinse and cut the cauliflower into small pieces .
Put the cauliflower in a covered pan and add 1 cup chicken broth. Simmer on very low for 20 minutes until soft and most of the chicken broth has evaporated. Be very careful to watch carefully, it can burn very quickly once the chicken broth has evaporated.
Once the cauliflower has soften, use a potato masher to smash, add two TBs of cream cheese, and heavy cream. Stir in shredded or shaved Parmesan. Season with salt and pepper. Sprinkle with fresh basil or chives. May add chopped bacon on top.
