Ingredients
  

  • 2-3 lbs chicken drumsticks and thighs
  • 3-4 sprigs Fresh mint
  • 1/2 cup olive oil
  • 1 cup water
  • 1 cup chopped onion May use sweet, green, or red onions
  • 2 TB fresh ginger minced May use 1 tsp powdered ginger
  • 6 cloves garlic minced May use 2 tsp garlic powder
  • 4 limes zested and juiced
  • 1 1/2 tsp black pepper
  • 1 tsp salt
  • 1 tsp cardamom
  • 2 tsp dried thyme
  • 2 tsp allspice
  • 1 tsp nutmeg
  • 2-3 TBs Jamaican Jerk seasoning

Equipment

  • 1 shallow oven pan lined with tin foil
  • 1 Grill optional

Method
 

Marinade
  1. Muddle the mint in a bowl with olive oil.
  2. Add the onions, ginger, garlic, and spices.
  3. Add one cup filtered water.
  4. Whisk the marinade in the bowl.
  5. Reserve one cup of marinade for grilling and basting. Store in a covered dish in the fridge.
  6. Place chicken in a glass casserole dish, pour marinade over, cover and marinade for at least 8 hours, preferable overnight.
Jamaican Keto Jerk Chicken
  1. Place the drumsticks on a tin-foil lined shallow oven pan.
  2. Brush with the reserved marinade and heavily coat with Jamaican Jerk seasoning.
  3. Place in 350 degree oven for 30-40 minutes until almost cooked through- 165 degrees.
  4. Brush with more marinade or olive oil, sprinkle with more seasoning, and brown on grill for the last five minutes. May broil in the oven for 2 minutes.
